Ensalada de Nopales (Cactus Salad)

Makes 1 serving for 2 to 4 people, depending on serving size.
INGREDIENTS:
1 jar (32 oz.) of diced nopales (several Mexican and U.S. brands already distribute in the Southwest) 2 to 4 jalapeņo peppers (depending on desired spice level) 3 medium size tomatoes 1/2 cup of diced cilantro 1/2 small onion salt and pepper to taste
DIRECTIONS:
1. Rinse and dice the tomatoes, onions, peppers and cilantro. 2. Mix with the nopales. 3. Add salt and black pepper to taste Note: For a somewhat more time-consuming, but tastier recipe, try Nopales Tiernos. |
